Peri Peri Chicken Salad

A quick, nutritious supper with a lot of flavor and only a few ingredients. It only takes a few minutes to prepare this Peri Peri Chicken Salad!

Ingredients

Foster Farms® Simply Raised® Free Range Chicken Breasts, One Package, No Antibiotics Ever

Marinade

  • 1/4 cup olive oil and
  • two limes’ juice
  • Two tablespoons of paprika smoked
  • Two teaspoons of oregano, dried
  • Half a teaspoon of salt
  • Two minced garlic cloves

Salad

  • Five ounces of infant arugula
  • Two cucumbers, cut into fourths and sliced
  • 1/4 cup of red onion, thinly sliced
  • 2/3 cup of drained canned chickpeas
  • Three tablespoons of hummus

Salad Dressing

  • Three tablespoons of olive oil and
  • half a huge lemon’s juice
  • One-fourth teaspoon of salt

Instructions

  • After taking the chicken breasts out of the box, place them on a flat surface, such as a cutting board. Cover with plastic wrap and use a meat mallet or the back of a pan to gently pound the chicken until it is the same thickness as before, about 1 inch thick.
  • Add the smoked paprika, dried oregano, olive oil, lime juice, salt, and garlic. Stir thoroughly, then cover the chicken breasts and let them marinate for the entire night in the fridge.
  • Preheat the grill to medium-high, or about 425 degrees.
  • Cover and place the marinated chicken breasts on the grill. After 8 minutes of cooking, turn and cook for another 8 minutes. A meat thermometer should read 165 degrees Fahrenheit in the thickest portion of the chicken.
  • While the chicken cooks, prepare the salad by putting the arugula in a big bowl and adding the chickpeas, sliced red onion, and chopped cucumbers on top. Dollop two to three tablespoons of hummus in the middle and leave space on the side for the sliced chicken breasts.
  • After cooking, let the chicken rest for two to three minutes before slicing it equally. To the salad, add the sliced chicken.
  • Mix the lemon juice, salt, and olive oil to make the dressing. Stir thoroughly, pour over the top, and serve.
