Aubergine/Courgette

Thick Cut Malted Bloomer Bread
Any substantial bread that isn’t cut too thin should be used. For extra fibre, I used a thick-sliced, wholemeal loaf. The bread should be sufficiently thick to accommodate the quantity of cheese and vegetables that you plan to cram into this toasted sandwich. How to make this recipe
- Prepare the aubergine and courgettes first, then cut them into long, thin slices (Image 1).
- Next, cut the tomatoes into slices (Image 2).
- In a barbecue or griddle pan, begin browning the veggies by frying them in rapeseed oil over high heat until they are scorched and cooked (Image 3).
- Set aside the vegetables after they have a beautiful char (Image 4).
- Slice the grilled veggies thinly into bite-sized pieces on a cutting board (Image 5).
- After that, put them in a big mixing basin. Fill the bowl with the lemon juice, finely chopped basil, and a large pinch of salt and pepper (Image 6).
- Before placing the two bread slices, butter-side down, in a non-stick frying pan over low to medium heat, you can choose to butter them. Next, top each slice with the grilled vegetables and grated cheese (Image 7).
- Flip the cheesy bread onto the second piece to close the sandwich after about three minutes. Keep heating the sandwich while turning it until the cheese has melted and the bread is properly toasted (Image 8).

- £0.70 for one aubergine cut into thin planks.
- Two thinly sliced, grilled courgettes (£0.80)
- Six thinly sliced salad tomatoes (£0.72)
- Juiced lemon (£0.54/4) = (£0.14)
- One bunch of freshly cut basil (£0.55)
- 200 g of shredded mozzarella (£2.00)
- 8 thick brown bread slices (£1.50/2) equals (£0.75)
- Butter is optional.
Cupboard Essentials
- 2 tablespoons of rapeseed oil,

Method
STEP 1
Using a griddle pan or barbecue, fry the prepared vegetables over high heat in rapeseed oil until they are cooked and blackened. Add to a large mixing bowl after thinly slicing into bite-sized pieces.
STEP 2
Then pour the lemon juice into the bowl, along with the finely chopped basil and a hefty pinch of salt and pepper.
STEP 3
Before putting the two bread slices, butter-side down, in a non-stick skillet over low to medium heat, you can choose to butter them. Place the grilled vegetables on one side of the bread and the grated cheese on the other.
STEP 4
To close the sandwich, flip the cheesy bread onto the second piece after about three minutes. Keep heating the sandwich while turning it until the cheese has melted and the bread is properly toasted. Have fun!
