Veggie Delight Salad

When were whole-grain sandwiches seen as healthful? Before learning that I had celiac disease, I ate a lot of foot-long subs because I worked next door to a Quiznos in high school and Subway was one of the few vegetarian-friendly eateries on campus in college. Filling my diet with whole grains and vegetables (even if those vegetables were tomatoes, bell peppers, and iceberg lettuce) seemed like a good thing to me. This Veggie Delight Salad, which was inspired by my favorite Subway order, has all the flavor of your favorite sandwich shop vegetables without any of the bad stuff.I make them frequently to use up leftover greens, onions, and olives because I nearly always have all the components on hand. If you need to add something else to get rid of (such summer squash or mushrooms) or omit something, this recipe is quite flexible. I suggest serving it with a mayonnaise-based dressing, such as Caesar, or preparing your own sandwich-style mixture of mayonnaise, mustard, salt, and pepper if you’re not according to the autoimmune protocol. If you want a heartier supper, you may also add leftover ham, turkey, or chicken!

Ingredients

  • Four cups of chopped green lettuce
  • Four cups of chopped spinach
  • Four ounces of sliced black olive
  • Three little carrot slices
  • One little cucumber, cut
  • Half a little chopped red onion
  • One little sliced dill pickle
  • 1/4 cup of extra virgin olive oil
  • A quarter cup of balsamic vinegar
  • Half a teaspoon sea salt and one tablespoon honey
  • 1/4 tsp ground ginger

Equipment

  • bowl for mixing

Instructions

  • In a large salad bowl, combine all the ingredients, toss thoroughly, and serve.
